Slow Cooker French Dip Sandwiches
Crock pot French dip sandwiches are made with tender roast beef, savory au jus, and melty cheese for the perfect warm and toasty beef sandwich that cooks itself in the slow cooker!
Ingredients
- 3 pounds chuck roast beef roast or rump roast also work, anywhere from 2.5- 4 pounds
- 1 teaspoon oregano
- ½ teaspoon thyme
- 1 teaspoon garlic powder
- 1/2 teaspoon onion powder
- ½ teaspoon salt
- ½ teaspoon black pepper
- 1 medium onion sliced thin, optional
- 3 cups beef broth
- 2 tablespoons Worcestershire sauce
- 1 medium bay leaf
- 6 bread rolls also called sausage rolls- these are typically wider than a hot dog bun, sub style
- 2 tablespoons butter salted, melted
- 6 lices provolone cheese
Instructions
- Spray the slow cooker with cooking spray. Trim the beef if necessary on a cutting board.
- In a small bowl add oregano, thyme, garlic powder, salt and pepper and mix well together. Add half the seasoning over the top of the beef on the cutting board. Give the seasoning a good rub to distribute it evenly. If using the optional onion, add the onion to the bottom of the slow cooker. Place the beef in the slow cooker seasoning side down. Sprinkle the second half of the seasoning over the meat and give it a good rub.
- Pour the beef broth into the slow cooker along the edge. Add the Worcestershire sauce over the meat. Add the bay leaf to the slow cooker, pushing it into the beef broth.
- Cover the slow cooker and cook on low for 7-8 hours or until the beef pulls and shreds easily with a fork. Take out the bay leaf and discard.
- Remove from the slow cooker and let the meat rest for about 10 minutes, then shred with two forks turned backward.
- Warm the oven on the broil setting. Spray a baking sheet lightly with cooking spray Open the rolls and place them cut side up on a pan.
- Brush both sides of the rolls with melted butter. Cut the slices of cheese in half, then place the cheese on the top side of each roll.
- Set the oven to the broil setting. Once the oven heats up, broil the rolls in the oven under the broiler for 1-2 minutes or until the cheese melts. Remove the pan from the oven and top the rolls with the shredded beef. Strain the broth from the slow cooker with a sieve, serve in small bowls to dip the sandwiches. Serve and enjoy!
Notes
- If using the optional sliced onion, you can serve it on top of the meat. While I did enjoy the flavor of the onions on top of the sandwich, it is more complicated to drain the aus jus sauce with the onions in the broth. Whether you use onion or not, the dish is still pretty flavorful, so use the sliced onion only if you prefer it.
