- 3 to 4 pounds beef chuck roast
- 1 1/2 teaspoons salt
- 1 teaspoon ground cumin
- 1 teaspoon chili powder
- 1 white onion sliced
- 4 Anaheim or Hatch chile peppers roughly chopped
