Ingredients

  • 3 carrot peeled and diced
  • 2 celery diced, stalks
  • 1 onion diced, medium
  • 4 cups ham diced, cooked
  • 2 cups 13 bean soup mix soaked overnight, Bob’s Red Mill
  • 4 thyme sprigs, fresh
  • 1 bay leaf
  • ½ teaspoon salt
  • ¼ teaspoon black pepper
  • 8 cups chicken broth
  • parsley (optional garnish)

Instructions

    Cup of Yum
  1. Place all ingredients in a slow cooker and heat on low for 8 hours or high for 4 hours.
  2. Check for seasoning and adjust accordingly. Garnish with fresh parsley.

Notes

  • Yes. You are not tied down to using ham. You could use leftover turkey.
