Slow Cooker Ham and Rice Casserole

This cheesy Ham and Rice Casserole is the best easy dinner recipe. It’s filled with savory ham, rice, and hearty broccoli to create a perfect balanced meal.

Ingredients

  • 1 10.5-ounce can cream of chicken soup
  • 1 cup mayo
  • 1 cup sour cream
  • 3 cloves garlic minced
  • 1 teaspoon ground black pepper
  • 1 ½ cups basmati rice uncooked
  • 1 pound ham cooked, boneless, cubed
  • 1 large broccoli head
  • 4 tablespoons butter melted
  • 1 cup fried onion straws
  • ¾ Cup cheddar cheese shredded

Instructions

  1. Get out and measure all of your ingredients. Spray slow cooker with cooking spray.
  2. In a large mixing bowl, add cream of chicken soup, mayo, sour cream, minced garlic, pepper, and rice. Stir until blended. Add to the slow cooker.
  3. Cut ham into ½” cubes. Wash broccoli and cut into florets. Add cubed ham and broccoli to the top of the rice. Cover with cheddar cheese.
  4. Top with ½ of the fried onion. Pour melted butter over the top. Set the slow cooker to High, cover and cook for 2 ½ hours.
  5. Remove the lid and stir to combine ingredients. Top with remaining fried onion straws.
  6. Serve hot and enjoy very bite!

Notes

  • Try a slow cooker liner: Use a slow cooker liner to save time on cleanup after dinner.
  • Check the liquid level: If more liquid is needed, add a splash of chicken broth to the casserole for moisture.
  • Let it rest after cooking: Allow the ham broccoli casserole some time to rest after it cooks to ensure all of the ingredients are perfectly tender.
