Slow Cooker Healthy Chicken Tortilla Soup
This Slow Cooker Healthy Chicken Tortilla Soup is super easy to throw together. You basically dump everything in a crockpot and walk away for 4-8 hours, later returning to a flavorful meal that magically cooked in your absence.
Ingredients
- 1 onion chopped
- 4 cloves garlic minced
- 6 cups chicken broth
- 1 (10 oz) diced tomatoes canned
- 1 (10 oz) green chile canned
- 1 (6 oz) tomato paste canned
- 1 (15 oz) diced tomatoes canned
- 1 (15 oz) black beans canned, rinsed and drained
- 1 (15 oz) corn canned, drained
- 1 Tablespoon chili powder
- ½ Tablespoon sugar
- 1 teaspoon cumin
- 1 teaspoon smoked paprika
- 1 teaspoon salt
- ½ teaspoon black pepper
- 3 chicken breast boneless skinless
- sour cream for topping; sliced, chopped, shredded, or as noted
- avocado
- hot sauce
- jalapeño
- onion
- cheese
- cilantro
Instructions
- Add all the ingredients to a slow cooker, stirring to combine. Cook on low for 8 hours or high for 4 hours.
- Then, remove the chicken and shred it using 2 forks.
- Return the chicken to the pot and give everything a good stir. Then serve, or keep the slow cooker on warm up to 3 hours until serving with your favorite toppings.
