Slow Cooker Italian Chicken and Potatoes
A healthy version of the ballpark classic, sausage and peppers, I’ve added in lean chicken breast, hearty potatoes and plenty of peppers and onions in this easy slow cooker dinner recipe.
Ingredients
- 1 pound chicken breast boneless, skinless
- 24 potatoes potato Terrific Trio or other Little Potato Company variety
- 1 red bell pepper (seeded and sliced)
- 1 medium onion (thinly sliced)
- 1 tablespoon extra virgin olive oil
- 2 teaspoons salt
- 1 teaspoon garlic powder
- 1 teaspoon black pepper
- 1 teaspoon oregano or 1/2 teaspoon fresh, dried
- ½ cup dry red wine optional, or white wine
Instructions
- Place all ingredients in slow cooker and cook on Low for 3-4 hours or until chicken is cooked through.
- Remove chicken and slice it on a cutting board before serving with the potatoes, peppers and onions. Garnish with fresh oregano if you wish.
