Ingredients

  • 1 pound boneless skinless chicken breasts (cubed)
  • 1 medium onion (diced)
  • 1 zucchini (diced)
  • 1 red pepper (seeded and diced)
  • 15 ounces cannellini beans (drained and rinsed)
  • 15 ounces diced tomatoes (low sodium)
  • 2 cups kale (chopped)
  • 6 cups chicken broth (low sodium)
  • 1 tablespoon dried basil
  • 1 tablespoon dried oregano
  • ½ tablespoon garlic powder
  • 1 teaspoon salt
  • ½ teaspoon chili flakes (or black pepper)
  • fresh parsley (optional garnish)

Instructions

  1. Place all ingredients except for the fresh parsley in a slow cooker and heat on Low for 8 hours or High for 4 hours.
  2. Garnish with fresh parsley and serve.

Notes

  • Yes. To use fresh kale instead of frozen simply add it 15 minutes before the end of the cooking time. Alternatively, Swiss chard or spinach would work well too.
  • Nope, it cooks in the slow cooker!! You can use raw.
