Ingredients

Kitchen Gadgets:
  • Slow cooker
  • Hand blender
Slow Cooker Leek & Potato Soup Ingredients:
  • 2 large leeks
  • 1 kg white potatoes
  • 1 Tbsp Greek yoghurt
  • 1 Tbsp oregano
  • 1 Tbsp thyme
  • 1 Tbsp parsley
  • salt & pepper
  • 750 ml vegetable stock
  • 28 g butter cubed optional

Instructions

    Cup of Yum
  1. Slice and clean your leeks in a colander.
  2. Peel and dice your potatoes.
  3. Load leeks and potatoes into the slow cooker, along with seasonings and vegetable stock and mix well. Slow cook for four hours on high or 7 hours on low.
  4. Add Greek yoghurt and any extra seasonings and blend well with a hand blender.
  5. Serve warm with bread.

Notes

  • Optional. I love to add butter to my leek and potato soup. If you don’t want a fat free leek and potato soup add small chunks of it when you add your seasoning on step #3.
