- Slow cooker
- Hand blender
Slow Cooker Leek & Potato Soup Ingredients:
- 2 large leeks
- 1 kg white potatoes
- 1 Tbsp Greek yoghurt
- 1 Tbsp oregano
- 1 Tbsp thyme
- 1 Tbsp parsley
- salt & pepper
- 750 ml vegetable stock
- 28 g butter cubed optional
Instructions
- Slice and clean your leeks in a colander.
- Peel and dice your potatoes.
- Load leeks and potatoes into the slow cooker, along with seasonings and vegetable stock and mix well. Slow cook for four hours on high or 7 hours on low.
- Add Greek yoghurt and any extra seasonings and blend well with a hand blender.
- Serve warm with bread.

Notes
- Optional. I love to add butter to my leek and potato soup. If you don’t want a fat free leek and potato soup add small chunks of it when you add your seasoning on step #3.
