Bacon adds a smoky, salty flavor to this easy and delicious slow cooker lentil soup full of veggies, protein and fiber.

Ingredients

  • 2 lices Bacon (thinly sliced)
  • 1 cup lentils (rinsed and sorted)
  • 2 celery diced, stalks
  • 2 carrot diced
  • 1 onion diced, medium
  • 2 cloves garlic (minced)
  • 1 tablespoon smoked paprika
  • ½ teaspoon red chili flakes
  • 15 oz diced fire roasted tomatoes canned
  • 32 oz chicken broth (low sodium)
  • parsley optional garnish, fresh chopped

Instructions

  1. In a frying pan over medium-high heat, cook bacon slices until brown and crispy then remove from pan and set on a plate lined with paper towel to drain.
  2. Add all ingredients including the cooked bacon to the slow cooker and heat on Low for 8 hours or High for 4 hours.
  3. Serve with fresh chopped parsley.

Notes

  • Salt is left out of this recipe due to the bacon, canned tomatoes and chicken broth used. Feel free to add salt if you prefer.
