Slow Cooker Maple Balsamic Chicken (Gluten-Free)
Soaked in a maple balsamic dressing, this dairy and gluten-free dinner recipe is cooked in the slow cooker to make busy weeknights easier.

Ingredients
- 4 chicken breast or two super large ones
- ¼ cup balsamic vinegar
- 3 tablespoons maple syrup
- ⅛ cup avocado oil
- 4 cups green beans optional
Instructions
- Place the chicken at the bottom of the crockpot
- Whisk together the vinegar, oil and syrup. Pour over the chicken and stir until chicken is coated.
- Cook on low for 4-5 hours (though there’s lots of liquid so it can cook for longer).
- If you want shredded chicken, take two forks and gently shred the breasts.
- In the last 30-45 minutes of cooking, before eating, place the green beans (if you're using them) on top of the chicken, put the lid back in place and let them steam until tender..
- Serve over rice, pasta, or with extra veggies (see notes for a thicker sauce!).

Notes
- This gluten-free slow cooker chicken recipe is sweet but not too sweet. If you like a sweeter chicken (like this honey-based, slow cooker teriyaki chicken), you may want to add a bit more maple syrup
- If you need the maple balsamic chicken to cook faster, slice the chicken breasts into strips.
- If you're using chicken thighs, know that there will be much more liquid in the slow cooker but the flavor will be awesome.
- To thicken the dressing and make a gluten-free sauce: mix together 1 tablespoon arrowroot powder to 3 tablespoons of sauce from the slow cooker and whisk into the sauce with the chicken. Let it then cook down.
- Green beans are used in this recipe but cauliflower or broccoli florets work too. You want to place the chopped vegetables in just 30 minutes before you're serving so that they steam cook but don't get too mushy.
