Ingredients
- 3-4 lb. chuck roast If it's super fatty, get a 4 lb. since you'll lose a lot when you trim it.
- 1 tomato chopped, large
- 1 yellow onion chopped
- 3 garlic minced, cloves
- 2 lime the juice of
- 4.5 ounce green chiles undrained, canned
- chipotles in adobo 1-2 chipotle peppers from can, can
- 1 tablespoon cumin
- 1/2 tablespoon chili powder
- 1 1/2 teaspoon smoked paprika
- 1 bay leaf
- 1/2 tablespoon salt
- black pepper several grinds
- 1/4 cup beef broth
- cilantro garnish, fresh
Instructions
- Cut roast into large chunks. Season meat with salt and pepper and sear in a hot pan until all sides have browned. Add meat to slow cooker with the rest of the ingredients, stir to combine.
- Cook on low for 6-8 hours, or until a meat thermometer reads 145°. The meat should be pull-apart tender. Garnish with fresh cilantro and use in your favorite Mexican dishes. Enjoy!
