Slow Cooker Mexican Beef Barbacoa

Ingredients

  • 3-4 lb. chuck roast If it's super fatty, get a 4 lb. since you'll lose a lot when you trim it.
  • 1 large tomato chopped
  • 1 yellow onion chopped
  • 3 garlic cloves minced
  • 2 limes the juice of
  • 4.5 ounce can green chiles undrained
  • can chipotles in adobo 1-2 chipotle peppers from can
  • 1 tablespoon cumin
  • 1/2 tablespoon chili powder
  • 1 1/2 teaspoon smoked paprika
  • 1 bay leaf
  • 1/2 tablespoon salt
  • several grinds of black pepper
  • 1/4 cup beef broth
  • fresh cilantro garnish

Instructions

  1. Cut roast into large chunks. Season meat with salt and pepper and sear in a hot pan until all sides have browned. Add meat to slow cooker with the rest of the ingredients, stir to combine.
  2. Cook on low for 6-8 hours, or until a meat thermometer reads 145°. The meat should be pull-apart tender. Garnish with fresh cilantro and use in your favorite Mexican dishes. Enjoy!
