Ingredients

  • 2 pounds bone-in chicken thighs
  • 2 tablespoons unsalted butter
  • salt and pepper to taste
  • 2 pounds quartered baby red potatoes
  • 4 minced garlic cloves
  • ½ cup grated Parmesan cheese
  • 1 tablespoon chopped fresh parsley
  • 1 tablespoon chopped fresh thyme
  • 1 tablespoon chopped fresh oregano
  • ⅓ cup olive oil
  • freshly grated Parmesan cheese
  • Parsley for Garnish

Instructions

  1. Melt the 2 tablespoons unsalted butter in a large skillet over medium-high heat. Season the 2 pounds bone-in chicken thighs with salt and pepper to taste and add to the skillet. Cook on each side for 1-2 minutes or until nicely brown on each side. Set aside.
  2. In a 5-6 quart slow cooker add 2 pounds quartered baby red potatoes, 4 minced garlic cloves, ½ cup grated parmesan cheese, 1 tablespoon chopped fresh parsley, 1 tablespoon chopped fresh thyme, 1 tablespoon chopped fresh oregano, and mix. Season with salt and pepper. Drizzle in ⅓ cup olive oil and mix until coated.
  3. Add the chicken to the slow cooker and cover. Cook on LOW for 6 hours or HIGH for 4 hours or until potatoes are tender. Top generously with freshly grated parmesan cheese, and parsley for garnish.
