Slow Cooker Peanut Butter Cookie Bars

Ingredients
- 1/2 cup unsalted butter softened
- 1/2 cup sugar
- 1/2 cup dark brown sugar packed
- 1 egg
- 1/2 teaspoon vanilla extract
- 1/2 cup creamy peanut butter
- 1 cup all-purpose flour
- 1/2 teaspoon baking powder
- 1/4 teaspoon sea salt (only if your peanut butter doesn't contain salt)
Instructions
- In a mixing bowl, cream together the sugars and butter with a hand mixer, then add the egg, vanilla, and peanut butter. Mix until combined. Add the flour, baking powder, and if you're using it, salt. Mix until fully combined, making sure to scrape the bottom and sides of the bowl. Dough will be thick.
- Place parchment paper in the slow cooker, then drop the cookie dough on it and spread it in a smooth, even layer.
- Place a dish towel under the lid and cook on high for 1.5-2 hours. Check for doneness before the finish time to prevent burning. The edges will be darker than the middle, but the middle should not be raw.
- When done, lift the parchment paper with the cookie on it out of the slow cooker and let cool. Once cool, cut into bars. Enjoy!

Notes
- You don't need to add salt if your peanut butter contains salt.
- Feel free to use chunky peanut butter if that's what you prefer.
- Don't forget the dish towel or your cookie bars won't turn out properly.
- This recipe has only been tested in a 6-quart slow cooker. Using a different size would affect the cooking time.
- If the edges get a little burnt, I just cut them off with a knife.
