Steel cut oats cook overnight with pumpkin, maple syrup and spices to create a healthy, make-ahead breakfast that will be waiting for you in the morning.

Ingredients

  • 1 cup steel cut oats Bob’s Red Mill brand
  • 2 cups milk whole
  • 2 cups water
  • 1 cup pumpkin pure
  • ⅓ cup maple syrup
  • ¼ cup flax seed meal
  • 2 teaspoons vanilla
  • 2 teaspoons cinnamon
  • 1 teaspoon nutmeg
  • 1 teaspoon ground ginger
  • ½ teaspoon cloves ground
  • ½ teaspoon salt
  • nut optional garnish, chopped nuts, fruit, and maple syrup
  • dried fruit
  • maple syrup

Instructions

    Cup of Yum
  1. Place all ingredients in slow cooker and stir until well combined.
  2. Cook overnight on Low for 8 hours.
  3. In the morning, stir oatmeal with a fork to loosen the steel cut oats and make sure everything is fully incorporated.
  4. Serve warm with chopped nuts, fruit or additional maple syrup if you wish.
