Ingredients

  • 16 ounce processed cheese like Velveeta
  • 15 ounce can no bean chili
  • 1 cup milk
  • ½ teaspoon cayenne pepper
  • 1 ½ teaspoons smoked paprika
  • ½ teaspoon salt
  • 1 tablespoon chili powder
  • 2 teaspoons cumin
  • 1 lime or 2 tablespoons lime juice
  • scallions optional for garnish

Instructions

  1. Cube up your cheese. Juice the lime.
  2. Add everything to the slow cooker and stir gently.
  3. Cover and cook on low for 2-3 hours, stirring to make sure everything melts.
  4. Once the cheese is all melted and the queso is hot, serve.
  5. Garnish with scallions and extra lime wedges.
