Slow Cooker Smothered Steak Recipe

Ingredients

  • 2 pounds sirloin steak
  • 1 teaspoon smoked paprika
  • 1 teaspoon onion powder
  • 1 teaspoon steak seasoning
  • 4 tablespoons butter
  • 1 onion sliced
  • 1 green bell pepper sliced
  • 2 cloves garlic minced
  • 2 tablespoons flour
  • 1 tablespoon brown sugar
  • 1 tablespoon Worcestershire sauce 
  • 2 envelopes brown gravy mix 1 ounce
  • 2 cups water

Instructions

  1. Season both sides of your steaks with paprika, onion powder, and steak seasoning.
  2. Heat a large skillet over medium-high heat and sear the steaks quickly on both sides. You want to get a little color, not cook them.
  3. Remove the steaks from the pan and place them at the bottom of your slow cooker.
  4. Add your butter, onion, and pepper to the skillet.
  5. Stir this around until the butter melts and the peppers and onion pick up the steak bits from the bottom of the pan.
  6. Toss in your garlic and flour and stir everything together for 1 minute.
  7. Add this pepper-onion mixture to the slow cooker.
  8. Next, in a small bowl, combine one brown gravy mix, water, Worcestershire sauce, and brown sugar. Whisk to combine.
  9. Pour this over the steak in the slow cooker.
  10. Cover and cook on low 6 hours or high 4 hours or until the meat is tender.
  11. Remove the steak from the slow cooker.
  12. Whisk in the second envelope of brown gravy mix.
  13. Add the steak back to the gravy.
  14. Serve over rice or mashed potatoes.

Notes

  • Searing your steak before adding it to the slow cooker makes a world of difference in terms of flavor and texture. It helps keep the steak in one piece and prevents it from turning into a big pot of mush. 
  • While I love the combination of smoked paprika, onion powder, and steak seasoning,  you can mix things up and use your favorite blend of spices. Maybe you like a little more heat from cayenne pepper or a bit of sweetness from brown sugar. 
  • The beauty of this recipe is that it's endlessly customizable. For an extra layer of flavor, add sliced mushrooms, diced potatoes, or even a splash of red wine to the slow cooker.
