Slow Cooker Southwestern Pork Stew
Pork, potatoes, and salsa verde make this delicious southwestern pork stew a Tex-Mex delight!
Ingredients
- 2 baking potato peeled and cut into chunks, medium
- 1.5 pounds pork shoulder cut in 1” cubes
- 1 onion chopped, medium
- 4 ounces green chiles canned chopped
- 1 teaspoon cumin ground
- 1 teaspoon oregano dried
- 16 ounces salsa verde
- For serving:
- rice hot cooked
- tortilla warm
- cilantro
- lime wedges
Instructions
- Layer the potatoes, pork, onion, and chiles in the slow cooker.
- In a small bowl, stir together the cumin, oregano, and salsa verde. Pour over the pork and potato mixture in the slow cooker.
- Cover and cook on low for 6-8 hours or high 4-6 hours.
- Serve over rice with cilantro and lime wedges.
