Pork, potatoes, and salsa verde make this delicious southwestern pork stew a Tex-Mex delight!

Ingredients

  • 2 medium baking potatoes peeled and cut into chunks
  • 1.5 pounds pork shoulder cut in 1” cubes
  • 1 medium onion chopped
  • 4 ounces canned chopped green chiles
  • 1 teaspoon ground cumin
  • 1 teaspoon dried oregano
  • 16 ounces salsa verde
  • For serving:
  • hot cooked rice
  • warm tortillas
  • cilantro
  • Lime wedges

Instructions

  1. Layer the potatoes, pork, onion, and chiles in the slow cooker.
  2. In a small bowl, stir together the cumin, oregano, and salsa verde. Pour over the pork and potato mixture in the slow cooker.
  3. Cover and cook on low for 6-8 hours or high 4-6 hours.
  4. Serve over rice with cilantro and lime wedges.
