Slow Cooker Sweet and Sour Pork Tenderloin

Ingredients

  • 1 tbsp brown sugar
  • 1 tsp ground ginger
  • 1 lb pork tenderloin
  • ½ red bell pepper large dice
  • ½ green bell pepper large dice
  • ½ red onion large dice
  • ½ cup pineapple chunks
  • ¼ cup honey
  • ¼ cup gluten free soy sauce
  • 2 tbsp Sweet chili sauce
  • 1 tbsp white wine vinegar
  • 2 cloves garlic crushed
  • 1 tsp red pepper flakes

Instructions

  1. In a small bowl combine the brown sugar and ground ginger.
  2. Rub the pork tenderloin with the mixture.
  3. Place in the crock pot and add the bell peppers, onion and pineapple.
  4. In a small bowl whisk the honey, soy sauce, sweet chili sauce, white wine vinegar, garlic and red pepper flakes together.
  5. Pour the sauce over the pork in the crock pot.
  6. Set the slow cooker on low and cook for 6-8 hours.
  7. Remove the pork tenderloin from the crock pot and use two forks to shred.
