Ingredients

  • 3 pounds sweet potatoes peeled and cut into 2 inch chunks
  • 1/2 cup butter melted
  • 1/2 cup brown sugar divided
  • 1/4 cup orange juice
  • 1/2 teaspoon kosher salt
  • 1 teaspoon vanilla
  • 1/2 cup Chopped Pecans

Instructions

  1. Toss the sweet potatoes with the butter, half the brown sugar, Kosher salt, orange juice and vanilla extract in the slow cooker.
  2. Cook on high for 4 hours or low for 8 hours.
  3. Either mash the potatoes or using an immersion blender to smooth the potatoes out.
  4. Top with the rest of the brown sugar and pecans and serve.
