Ingredients

Soup:
  • 1 sweet onion finely diced
  • 4 cloves garlic minced
  • 1 tablespoon fresh ginger minced
  • 4 cups low-sodium vegetable broth plus more if needed
  • 6 cups diced sweet potatoes
  • 1/2 cup creamy almond butter
  • 1/2 teaspoon sea salt or to taste
  • 1/4 teaspoon ground nutmeg
  • 1/3 teaspoon ground cinnamon
  • 1/4 teaspoon cayenne pepper optional
  • 1/8 teaspoon ground cloves
  • 1/8 teaspoon ground black pepper
  • 1 cup heavy cream
Toppings:
  • chopped fresh cilantro
  • Chopped peanuts or pecans
  • drizzle of cream
  • Drizzle of olive oil

Instructions

  1. Wash and dice the sweet potatoes.
  2. Next, add to the crockpot all of the ingredients except for the heavy cream and the toppings.
  3. Cook on high for 4 hours, or on low and for 6 hours until the potatoes are fork-tender.
  4. Then, using an immersion blender, mash and puree the soup until you get a creamy consistency.
  5. Add the heavy cream and adjust the taste if needed. Cook for another 30 minutes.
  6. Serve with the suggested toppings.
