Slow Cooker Turkey Corn Chowder

Ingredients
- 1/4 cup butter
- 5 pounds potato peeled and cubed
- 1/2 tablespoon black pepper
- ½ tablespoon onion optional, dried minced
- 4 cups chicken broth
- 2 bags corn 10 ounces, frozen
- 1 ½ tablespoons cornstarch
- 1 ½ pint heavy whipping cream
- 3-4 cups turkey leftover shredded
Toppings
- Bacon crumbled
- cheddar cheese shredded
- green onion sliced
Instructions
- Place your butter in the bottom of your slow cooker.
- Place your peeled and cubed potatoes into the slow cooker.
- Add the pepper, chicken broth and corn, and minced onion if you want.
- Cover with lid and cook on low for 6 hours or on high for 4 hours.
- 30 minutes before serving mix the cornstarch with 2 tablespoons of cold water.
- Pour the cream into the crockpot and stir in the cornstarch slurry.
- Add in your leftover shredded turkey.
- Cover and let cook for 30 minutes.
- Top with bacon, cheese, and green onions.
- Serve!
