Slow Cooker White Chicken Chili
This easy slow cooker chili combines chicken, white beans, diced green chilis, and all of your favorite Mexican spices into a delicious, protein-packed dinner – perfect for busy weeknights.
Ingredients
- 12 ounces chicken breast such as rotisserie, shredded
- 6 cups chicken broth (low sodium)
- 1 onion diced, medium
- 2 ounce cans White beans (drained and rinsed )
- 16 ounces salsa verde
- 2 ounce green chiles chopped, canned
- 2 tablespoons cumin
- 2 tablespoons smoked paprika
- 1 tablespoon oregano dried
- ½ teaspoon cayenne pepper optional
- salt to taste
- black pepper to taste
- avocado optional toppings
- cilantro
- scallion
- PLAIN yogurt
- lime
Instructions
- Place all ingredients in a slow cooker and heat on Low for 8 hours or High for 4 hours.
- Serve with optional toppings.
Notes
- Will last in the refrigerator for up to 5 days. Can be kept in the freezer for up to 3 months.
