Ingredients
- 3 medium russet potato peeled and cut into 1 inch cubes
- 1 medium yellow onion peeled and diced
- 4 cups chicken broth
- 3 cloves garlic minced
- 1 teaspoon salt
- 1 pound Italian sausage in casing, hot
- 4 cups kale loosely packed, chopped
- 1 cup heavy cream
Instructions
- Peel and cube 3 medium russet potatoes and place them into a 6-quart slow cooker. Dice 1 medium yellow onion and place it in the slow cooker.
- Add 4 cups chicken broth, 3 cloves minced garlic, and 1 teaspoon salt. Place 1 pound hot Italian sausage on top of all the other ingredients.
- Cover and cook on low for 6 to 8 hours.
- During the last hour of cooking, remove the sausage from the slow cooker, slice and return it to the slow cooker. Stir in 4 cups chopped kale and 1 cup heavy cream.
- Cover and continue to cook for 1 more hour to allow the kale leaves to soften. Serve hot.
Notes
- If Italian sausage without casing is used, brown it in a skillet over medium-high heat for 4 to 5 minutes before adding to the slow cooker.
