Slow Roasted Red Onions

These roasted red onions are marinated and charred to perfection, creating an irresistible sweet flavor and creamy texture.

Ingredients

  • 5 medium red onions cut into 1 inch thick wedges
  • 2 tbsp olive oil
  • 1/2 tsp kosher salt
  • 1/4 tsp ground black pepper
Marinade
  • 1/2 cup water
  • 1/2 cup red wine vinegar
  • 1 tbsp brown sugar
  • 1 tbsp soy sauce

Instructions

  1. Place a rack in lower third of oven and preheat to 400°F.
  2. Arrange sliced onions into 9x12" roasting pan that will hold all onion slices. Blend marinade ingredients in small bowl and pour over onion slices (See Note 1).
  3. Drizzle the onions with olive oil, season with salt and pepper. Roast for 30 minutes or until wedges are well charred and liquid has become syrupy.

Notes

  • Cover with plastic wrap and refrigerate overnight for a deeper flavor, optional.
