Small Batch Cherry Jam

Quick and easy small batch sweet cherry jam, with a bit of cinnamon spice and zesty orange.

Ingredients

  • 5 oz pitted and halved sweet cherries
  • 1 cup sugar
  • ½ orange, juiced
  • 1 teaspoon pectin
  • 1 cinnamon stick (Optional)

Instructions

  1. Place the cherries, sugar, orange juice and pectin into a deep sided saucepan over a medium heat.
  2. Cook over a medium heat, stirring occasionally until the sugar has melted.
  3. Add a cinnamon stick, if using.
  4. Continue cooking over a medium heat, increasing the heat slightly so that the mixture comes to a boil. Allow this to boil until it begins to thicken and reaches 220°F (105C) on a food thermometer.
  5. Remove from the heat and decant into a baking tray to cool quickly or into a heatproof storage bowl.
