Notes

  • Melted butter: I have tested this recipe using both softened butter and melted butter. Softened butter incorporates air into the dough, giving the cookies a fluffier, more cake-like texture. Melted butter gives these cookies a denser, fudgy center and crisp edges, which is my preference. Either way, the smarties cookies will be delicious.

  • Room temperature ingredients: For best results have all ingredients at room temperature. They will blend together more easily and the cookies will have a uniform texture. If you forget to take your eggs out, simply submerge them in warm water for about 5 minutes.

  • Don't overmix: If you mix your cookie dough too much, you'll get a tough, dense cookie. Mix ingredients until just combined.

  • Uniformly sized cookies: Use a tablespoon or a mini cookie scoop, or even a melon baller, to portion the cookie dough balls into uniform sizes so that they will all bake at the same time.
