Smashed Brussel Sprouts

Ingredients

  • 1 pound (450g) brussel sprouts
  • 2 tablespoons olive oil
  • 1 teaspoon garlic powder
  • 1/3 cup (35g) grated parmesan cheese
  • salt and pepper to taste

  1. Clean the brussel sprouts and remove the discolored outer leaves. Steam brussel sprouts for 15 minutes or until soft (you can also boil them in water for about 15 minutes but I've found they are less watery and more crispy when steamed).
  2. Preheat the oven to 425°F (220°C), place the rack one shelf above the center of the oven.
  3. Remove them from the water to a clean kitchen towel. Pat them dry really well.
  4. Transfer to a baking sheet (preferably dark-colored when possible), don't line it with parchment paper.
  5. Toss with olive oil, garlic powder, and half of the parmesan. Season well with salt and pepper.
  6. Smash with a flat glass.
  7. Sprinkle with the remaining parmesan.
  8. Bake for 25 minutes or until browned and crispy. Every oven bakes differently so keep an eye on them after 20 minutes so they don´t get too dark.
  9. Enjoy!
