Ingredients

  • 2 oz cans chickpeas drained and rinsed
  • 2 avocado ripe
  • 1 red onion finely chopped
  • 1 large celery stalk cleaned and finely chopped
  • 1/4 cup fresh dill chopped
  • 2 tablespoons fresh parsley chopped
  • 2 tablespoons fresh mint chopped
  • 2 tablespoons fresh basil chopped
  • 2 tablespoons Fresh green onions chopped
  • 2 tablespoons capers
  • 2 teaspoons red wine vinegar
  • 1 green bell pepper chopped
  • 1 tablespoon lemon juice
  • 2 tablespoons olive oil
  • Salt and freshly ground black pepper to taste

Instructions

  1. Slice the avocados in half, remove and discard the seed, and scoop the flesh into a large bowl.
  2. Add the chickpeas to the bowl, and use a fork to mash the two together.
  3. After that, chop the veggies and the fresh herbs and add them to the bowl.
  4. Stir in the remaining ingredients and season with salt and pepper to taste.
  5. Serve as a salad or sandwich.
