Smoked Almond and Goat Cheese Stuffed Dates

- 12 Medjool dates
- 4 ounces goat cheese softened
- 1/4 cup chopped smoked almonds
- salt and pepper to taste
Instructions
- Cut a slit lengthwise in the medjool dates and remove the seed.
- In a small bowl stir together the softened goat cheese, chopped almonds, salt and pepper until they are well combined.
- Stuff each date with some of the almond goat cheese mixture. Serve immediately or store in an airtight container in the refrigerator until ready to serve.

Notes
- If you make the dates ahead of time and refrigerate them, remove them from the refrigerator 10-15 minutes before serving so they soften a bit.
