Ingredients

  • 1 green cabbage medium head
  • 2 tablespoons olive oil
  • 1 teaspoon kosher salt
  • 1/2 teaspoon black pepper ground
  • 1/2 teaspoon garlic powder
  • wood chips such as hickory or applewood, for smoking

Instructions

  1. Preheat your smoker to 250 degrees and add wood chips of your choice.
  2. Remove the outer leaves of the cabbage, cut into quarters, and remove the core.
  3. In a small bowl, mix together olive oil, kosher salt, black pepper, and garlic powder.
  4. Brush the seasoning mix over all sides of the cabbage quarters.
  5. Place the cabbage quarters directly on the smoker rack, cover, and smoke for about 1 hour and 30 minutes, or until the cabbage is tender and has a nice smokey flavor.
  6. Remove the smoked cabbage from the smoker, let it rest for a few minutes, then serve warm.
