Smoked Corn on the Cob

This Smoked Corn on the Cob is incredibly flavorful, simple to make, and is the perfect summertime side dish!

Ingredients

  • 4 ears of corn, with husks
  • olive oil
  • seasoning of choice *we use Chupacabra, see link above
  • toppings of choice: butter, salt/pepper, cheese

Instructions

  1. Pull the husks back (but keep them on) and remove all the silks from each cob.
  2. Place corn in a large bowl of water and let soak for a few hours *if you don't have time for this step, you can skip, it just helps get the corn extra tender
  3. Remove corn from water and shake excess water off.
  4. Rub about 1/2 tablespoon olive oil onto each corn cob, coating entirely.
  5. Sprinkle desired seasoning around each corn cob and place corn husks back onto cob.
  6. Heat smoker to 375 degrees and place corn directly on grates.
  7. Smoke for about 45 minutes, or until tender.
  8. Remove corn from smoker and add desired toppings. Serve!
