Smoked Mac and Cheese with Lobster

This smoked mac and cheese with lobster puts a fancy twist on an old favorite. This smoked gouda mac and cheese is so decadent.

Ingredients

  • 1 lb noodles
  • 2 oz lobster tails
  • 4 tablespoon salted butter
  • 1 teaspoon smoked paprika
  • 1 tablespoon lemon juice
  • fresh parsley chopped as garnish
Bread Crumb Topping
  • 1 cup Panko bread crumbs
  • ⅓ cup shredded Parmesan cheese
  • ¼ cup salted butter melted
  • 1 teaspoon horseradish
  • 1 tablespoon lemon juice
  • ½ tablespoon Old Bay seasoning
Cheese Sauce
  • 4 oz block sharp white cheddar shredded
  • 2 oz block Gouda shredded
  • 4 oz block Gruyère cheese shredded
  • 2 cups whole milk
  • 2 cups heavy cream
  • ¼ cup all purpose flour
  • 4 tablespoon salted butter
  • 1 cup diced yellow onion
  • 3 garlic cloves minced
  • 1 tablespoon minced shallot
  • 1 tablespoon sun dried tomato paste
  • 2 bay leaves
  • 1 teaspoon coarse black pepper

Instructions

  1. Get out and measure your ingredients.
  2. Set the smoker to 350 degrees and preheat for 15 minutes.
  3. Boil and drain the noodles.
  4. Add butter to a Dutch oven without the lid and melt in the smoker.
  5. Once melted, add onion, garlic, and shallot. Sauté for 5 minutes.
  6. Whisk in the flour and cook for 3 minutes.
  7. Then, add sundried tomato paste, and pepper.
  8. Followed by milk and cream.
  9. Whisk well to combine. Top with bay leaves.
  10. Place the lid on the Dutch oven. Cook for 20 minutes.
  11. At the same time, place lobster tails directly on the grill grates and cook for 10 minutes.
  12. And bright colored.
  13. Cut a slit down the tail and pry the meat out. If you need more information on how to do this check out our how to cut a lobster tail post.
  14. Chop lobster meat.
  15. Add lobster meat to a small cast iron skillet with 4 tablespoon butter, smoked paprika, and ½ tablespoon lemon juice.
  16. Place back into the smoker for 5 more minutes. Remove and set aside.
  17. Add panko, parmesan cheese, horseradish, lemon juice, and old bay seasoning in a small mixing bowl.
  18. Add parsley and stir until combined.
  19. Add melted butter.
  20. Stir until blended.
  21. Remove Dutch Oven from the smoker.
  22. Add shredded cheese to the Dutch oven.
  23. Stir until melted.
  24. Add noodles to the cheese sauce.
  25. Stir until coated.
  26. Top with lobster meat.
  27. And crumb mixture to top and place back into smoker without lid for 15 minutes.
  28. Remove from smoker.
  29. Serve.

Notes

  • Mmm...mac and cheese with lobster...what could sound more delicious? Well, I'll tell ya...take that awesome dish and pair it with a side or two and you'll have a meal that will make you the talk of the town!
  • Don't open the smoker lid unless you have to. The smoke and heat should stay inside the smoker where they can do their thing.
  • When shredding your cheese, use the fine side of the cheese grater. This will allow the cheese to melt faster.
  • Use an oven glove or let the lobster cool a bit before attempting to cut the shell and remove the meat.
