Smoked Salmon Appetizer

Ingredients

  • 6 oz (170g) cream cheese
  • 1 tablespoon milk
  • 1 tablespoon finely chopped dill
  • 1 teaspoon lemon juice
  • salt and pepper to taste
  • 1 large english cucumber
  • 7 oz (200g) smoked salmon
  • fresh dill to decorate

Instructions

  1. Combine cream cheese with milk, finely chopped dill, and lemon juice. Season to taste with salt and pepper.
  2. Peel the cucumber thinly (this is optional, I'm peeling the cucumber because I don't like the skin) and cut it into 1/3-inch (3/4 cm) slices (don't slice it too thick).
  3. Spread the cream cheese mixture over the cucumber slices with a knife.
  4. Top with smoked salmon pieces - I cut the salmon into strips and rolled them up.
  5. Decorate with small twigs of dill.
  6. Enjoy!

Notes

  • This appetizer can not be made ahead - the cucumbers will release water and lose their crunch. You can make the cream cheese mixture ahead and store it in the fridge.
  • Calories = 1 appetizer (1/29 of the recipe). This is only an estimate!
