Smoky Salsa (Chevy's Salsa)

Ingredients

  • 2 lbs fresh tomatoes
  • 1 large onion sliced
  • 2 Jalapeno peppers
  • ¼ cup fresh cilantro chopped
  • 4 cloves of garlic minced
  • Sea Salt and Freshly Cracked Pepper to taste

Instructions

  1. Preheat the broiler to high and move an oven rack near the top of the oven.
  2. Place the tomatoes, onion slices, and jalapenos on a baking sheet.
  3. Place into the oven under the broiler and lightly char the veggies on all sides. Remove from the oven and let cool.
  4. Remove the stems from the jalapenos and the cores from the tomatoes.
  5. Place the cooled veggies in the blender or with an immersion blender with cilantro, minced garlic, sea salt, and freshly cracked pepper, to taste.
  6. Blend for about 10 seconds, or until desired consistency.
  7. Taste and re-season with sea salt and freshly cracked pepper, to taste, if needed.
  8. Pour into a container and chill.
  9. Serve with chips. Enjoy.
