S’mores Baked Oatmeal

Have dessert for breakfast with this s'mores baked oatmeal! It's made with healthy ingredients and studded with mini marshmallows, graham crackers and chocolate chips.

Ingredients

  • 2 cups old fashioned rolled oats
  • 2 cups unsweetened almond milk
  • ¼ cup pure maple syrup plus more for serving
  • 1 teaspoon baking powder
  • ½ teaspoon sea salt
  • 1 Tablespoon ground flaxseed
  • 1 Tablespoon melted coconut oil
  • ½ cup applesauce
  • 1 teaspoon vanilla extract
  • ½ cup chopped chocolate or chocolate chips divided
  • ½ cup mini marshmallows divided
  • ¼ cup chopped/crushed graham crackers

Instructions

  1. Preheat the oven to 375°F and spray an 8×8 square baking dish with cooking spray.
  2. Combine oats, milk, maple syrup, baking powder, sea salt, flaxseed, coconut oil, applesauce, vanilla, ¼ cup chocolate chips and ¼ cup marshmallows in a large mixing bowl. Stir to combine.
  3. Carefully pour oatmeal mixture into the prepared baking dish.
  4. Top with graham crackers and remaining chocolate chips and marshmallows.
  5. Bake for 40-45 minutes, until toothpick comes out clean.
  6. Let cool for 10-15 minutes then portion into 6 pieces and serve warm.
