Snickerdoodle Cookie Dough Bites - gluten-free, vegan, keto

These Gluten-free Edible Snickerdoodle Cookie Dough Bites take only minutes to make and are a great easy healthy snack that the whole family will love!

Ingredients

  • 1/2 cup almond butter (use coconut butter for AIP - see above notes)
  • 1 teaspoon cinnamon
  • 3 tablespoons coconut flour
  • 3 tablespoons coconut milk (or alternative dairy-free milk)
  • 3 tablespoons low carb sweetener
  • 15 drops vanilla liquid stevia (see Homemade Liquid Stevia; see Recipe Notes for substitutes; if desired, sub 2 tablespoons low carb sweetener instead)
  • 1/2 teaspoon vanilla extract
  • 1/4 teaspoon salt (optional but really adds a lot!)
Topping
  • 3 tablespoons low carb sweetener
  • 1 1/2 teaspoons cinnamon

Instructions

    Cup of Yum
  1. Put all ingredients, except the topping ingredients, into a bowl.
  2. Mix well until combined thoroughly.
  3. Roll into balls and roll to coat in the topping.
  4. Store in refrigerator.

Notes

  • Additional Coconut Flour: If needed, add more coconut flour, 1/2 tablespoon at a time, to make the dough workable to roll into balls.
  • Low Carb / Keto: For those of you on a restricted low-carb diet, you might wish to use organic erythritol rather than xylitol as it has fewer net carbs. You might find that you need to add about 1/3 more erythritol or increase the stevia extract to taste.
  • AIP: Use organic coconut sugar instead of xylitol and stevia. You could also try honey or maple syrup, but I haven't tried these options. Also add a splash of vanilla since you are subbing for vanilla liquid stevia. Sub in coconut butter for the almond butter. You can make your own coconut butter by following these instructions.
  • Homemade Coconut Milk: If you would like to make your own coconut milk, here is my Easiest Coconut Milk. You could also use another dairy-free milk.
  • THM: For those on the Trim Healthy Mama plan, this recipe will qualify as an "S."
  • Sweetener Alternatives: If you'd like to use another sweetener instead of the low-carb sweetener and liquid stevia, use the equivalent of 5 tablespoons of sugar.
