Soba Noodles With Edamame And Spring Veggies

Ingredients
For the Dish:
- 10 oz soba noodles
- 1 Lb asparagus cleaned and cut into 3
- 8 oz mushrooms sliced
- 2 Cups edamame shelled
- 2 carrot peeled and julienned (or sliced thinly
- black pepper
- salt
- 1 Teaspoon neutral cooking oil any kind, generic cooking oil
For Sauce
- 2 Tablespoons soy sauce
- 2 Teaspoons sesame oil
- 2 Teaspoons sriracha
- lime juice of 1
- 1/2 Teaspoon ginger minced
Garnish
- 1/4 Cup cilantro chopped
- 1 green onion sliced
Instructions
- Mix all the sauce ingredients together in a small bowl. Set aside
- Bring one big pot of water to a boil
- Season the water with salt, pepper and add a little oil
- Throw in the soba noodles, edamame, mushrooms and asparagus. Cook for 1 minute
- Add the carrots and cook for 2 more minutes. Stir
- Drain the whole mixture in a colander
- Pour the pasta and veggies back in the pot
- Add the sauce on top and stir well with a wooden spoon
- Serve and enjoy!
