Ingredients

  • 1 yellow onion chopped, large
  • 1 green bell pepper seeded and chopped
  • 1 red bell pepper seeded and chopped
  • 6 cloves garlic peeled and chopped
  • 1 cilantro roughly chopped, bunch
  • 1/4 cup olive oil

Instructions

    Cup of Yum
  1. Combine onion, bell peppers, garlic, and cilantro in a food processor.
  2. Pulse until the mixture is finely chopped but not pureed, scraping down the sides as needed.
  3. Transfer the sofrito to an airtight container and store in the refrigerator for up to a week or freeze for up to three months.
