Soju Mojito Cocktail

Ingredients

  • 2.5 oz soju
  • 1.5 oz simple syrup (more or less to taste)
  • 1 oz lime juice
  • 5-6 mint leaves
  • club soda splash - up to 4 oz
  • ice
Maesil Mint Mojito
  • 2.5 oz soju
  • 2 oz maesil syrup
  • 1/2 oz lime juice
  • 5-6 mint leaves
  • club soda
  • ice

Instructions

  1. In a cocktail shaker or sturdy tall cocktail glass cup, add the mint leaves and lime juice. Then using a muddler or wooden spoon, smoosh or 'muddle' the mint leaves.
  2. To the muddled mint leaves + lime juice, add soju, simple syrup (or maesil syrup OR sugar), a handful of ice and shake if it's a cocktail shaker or just mix with a long spoon if it's a cup.
  3. Strain into a glass filled with ice and top with a splash of club soda. Garnish with a sprig of mint and lime slices.
  4. Say Geonbae 건배 or CHEERS!

Notes

  • If using sugar instead of syrup, try adding 1 tsp per glass up to 1 Tbs if you like a sweeter drink.
  • Tips for making a BIG BATCH for parties - Make a pre-mix of the soju, syrup (or sugar), lime juice in a pitcher and then just muddle the mint leaves in each cup with a splash of the soju mix, add ice and then top with some clud soda. Garnish with some lime or mint leaves and it will be a hit at your party!!
  • Skip making simple syrup and use Maesil Cheong Syrup that you can buy online or make one yourself!
  • Try adding a splash of stronger ABV liquor like Andong Soju or Hwayo to give it an extra kick!
