Sole Florentine Recipe

Ingredients

  • butter
  • 3 lbs fresh sole preferably lemon sole
  • 2 lbs spinach cleaned and de-stemed
  • 1 medium onion sliced thinly
  • ¾ lb mushrooms sliced
  • 1 cup mayonnaise
  • 1 cup Parmesan Cheese freshly grated
  • 2 tablespoons Worcestershire sauce 
  • 1 lemon

Instructions

  1. Clean and destem the spinach and then slice the onion and mushroom
  2. Grease a large baking dish with butter.
  3. Layer the dish in the following order... onions, mushrooms, spinach, sole (dark side down).
  4. Squeeze juice of lemon over the sole.
  5. Mix mayonnaise, cheese and Worcestershire sauce and spread over fish.
  6. Bake at 350° F for 20-25 minutes. Top should be golden brown.
