Sopa de Lentejas

Ingredients

  • 1 tablespoon olive oil
  • 1 onion large, diced
  • 2 cloves garlic minced
  • 2 carrots diced
  • 1 celery diced, stalk
  • 1 cup brown lentils rinsed and drained
  • 6 cups vegetable broth
  • 1 bay leaf
  • 1 teaspoon cumin ground
  • salt to taste
  • black pepper to taste
  • cilantro for garnish, fresh, chopped

Instructions

  1. Heat olive oil in a large pot over medium heat. Add onions and garlic, sauté until onions are translucent, about 5 minutes.
  2. Add the diced carrots and celery to the pot and cook for another 5 minutes, stirring occasionally.
  3. Stir in the lentils, vegetable broth, bay leaf, and ground cumin. Bring the mixture to a boil.
  4. Reduce heat to low, cover, and simmer for about 30 minutes, or until lentils are tender. Season with salt and pepper to taste.
  5. Remove the bay leaf. Serve the soup hot, garnished with chopped fresh cilantro.
