Soup Maker Boxing Day Soup

Ingredients

  • 2 pigs in blankets
  • 1 Tbsp mashed potatoes
  • 3 Tbsp Carrot & Swede Mash
  • 2 Tbsp Cauliflower Cheese
  • 200 g turkey breast
  • 4 Roast Potatoes
  • 240 ml turkey gravy
  • 3 Tbsp leftover stuffing
  • 160 ml Instant Pot Veggie Stock
  • 1 Tbsp thyme
  • 1 Tbsp parsley
  • salt & pepper

Instructions

  1. Load your leftovers into your soup maker and then also add 240ml/1 Cup of water.
  2. Set the soup maker to smooth and then when it beeps add in your seasonings, pulse for a couple of sections and then check the consistency. If too thick add in some extra water or extra stock.
  3. Serve with bread and a few of your leftover ingredients on top if you prefer.

Notes

  • Size. Note our boxing day soup made enough to feed six of us in freezer portions. It could easily have been made thinner and fed more people. Plus, you might have less leftovers than us.
