Soup Maker Gazpacho Cold Tomato Soup

Soup Maker Gazpacho. How to make a traditional gazpacho using your soup maker. Perfect for hot summer days and loaded with fresh tomatoes, peppers, onion, and garlic.

Ingredients

Gazpacho Ingredients:
  • 6 tomato medium
  • 2 spring onions
  • 1 cucumber small
  • 2/3 red pepper
  • 1/3 green pepper
  • 2 garlic cloves
  • 2 Tbsp basil chopped, fresh
  • 2 Tbsp balsamic vinegar
  • 1 Tsp paprika
  • 1 Tsp cumin
  • salt
  • black pepper

Instructions

  1. Peel your cucumbers. Remove the cores from the tomatoes. Remove the seeds from the peppers. Peel your garlic cloves. Dice your cucumber, peppers, tomatoes, spring onions and fresh basil.
  2. Load everything into the soup maker apart from garlic, basil, and tomatoes. Making sure that the cucumbers go into the soup maker first. Place the lid on the soup maker and cook for 10 minutes on smooth soup.
  3. After 10 minutes add in the rest of the ingredients and cook for a further 20 minutes on the same setting.
  4. When it beeps add ice cubes to speed up the chilled soup process and then serve.

Notes

  • Chilled. Because you will want your Spanish tomato soup chilled, I recommend adding in some ice cubes. Then use the blender on the soup maker to mix them. Then you can treat your tomato soup as a smoothie and then if it gets warm just blast another ice cube.
  • Quantities. I enjoyed this tomato soup over breakfast for 3 days and still had some leftover. It would easily feed four people for dinner. If you have leftovers you can freeze it for later.
  • Stages. You will notice that we do a 10 minute cook and add tomatoes and then another 20 minutes. This is because the soup maker is not as big as a pan and it wont fit everything in. But after 10 minutes the soup ingredients have shrunk enough.
  • Liquid. You will also notice that I have not added stock. This is because cucumbers are loaded with water and so are tomatoes. This is enough to create a liquid for the soup.
