Ingredients

Salad Soup Ingredients:
  • 2 celery sticks
  • 1 cucumber medium
  • 5 tomato medium
  • 50 g red pepper diced
  • ¼ zucchini medium
  • 2 spring onions
  • 1 Tsp Garlic puree
  • 1 Tsp thyme
  • 1 Tsp oregano
  • 1 Tsp basil
  • salt
  • black pepper
  • 125 g salad greens
  • 1 canned tomatoes optional

Instructions

  1. Slice and clean your celery and cucumber. Remove the cores from your tomatoes and dice your courgette.
  2. Load into the soup maker making sure that either the cucumber, courgette or tomatoes are on the bottom. Add the seasonings and the garlic on top. Place the lid on the soup maker and cook for 10 minutes on smooth soup.
  3. After 10 minutes add in the lettuce and cook for a further 20 minutes on the same setting.
  4. When it beeps serve.

Notes

  • Quantities. To extend the quantities you can pour in a can of tinned tomatoes. It will also give it more of a red colour and stop it from being so brown.
  • Stages. You will notice that we do a 10 minute cook and add lettuce and then another 20 minutes. This is because the soup maker is not as big as a pan and it wont fit everything in. But after 10 minutes the soup ingredients have shrunk enough.
  • Liquid. You will also notice that I have not added stock. This is because cucumbers are loaded with water and so are tomatoes and courgettes. This is enough to create a liquid for the soup.
