Sour Cream Scrambled Eggs

Ingredients

  • 3 tablespoons sour cream
  • 6 large eggs
  • 1/4 teaspoon dry mustard powder
  • Salt and freshly ground black pepper
  • 1 tablespoon butter
  • 1 tablespoon chopped chives

Instructions

  1. In a medium bowl, mix the eggs, sour cream, mustard, salt, and black pepper.
  2. Heat the butter in a large skillet until melted over medium heat.
  3. Pour the egg mixture into the skillet.
  4. Cook until the eggs are thick and creamy, throughout, but still moist. Add the fresh chives at the end and mix in.
  5. Remove and plate immediately to stop the eggs from cooking further and drying out.
