Ingredients

  • 1 pound chicken breast
  • 1 tablespoon vegetable oil
  • 1/2 teaspoon garlic powder
  • 1/4 teaspoon celery salt
  • 1/2 cup celery finely diced
  • 1/4 cup onion finely diced
  • 3 hard-boiled eggs chopped
  • 1 tablespoon sweet relish
  • 1/2 cup mayonnaise
  • 1 tablespoon dried parsley
  • salt and pepper to taste

  1. Preheat your oven to 350°F. Brush the chicken lightly with vegetable oil and season with the garlic powder and celery salt.
  2. Bake the seasoned chicken in the preheated oven for 25 minutes, or until fully cooked. Allow to cool, then chop into small pieces.
  3. In a large mixing bowl, combine the chicken, celery, onion, hard-boiled eggs, and sweet relish. Add the mayonnaise and dried parsley. Mix until well combined. Season with salt and pepper to taste.
  4. Chill in the refrigerator for at least 1 hour to blend the flavors. Serve chilled.
