Southern Cornbread Recipe

Ingredients

  • 2 cup self-rising yellow cornmeal
  • 1 cup self-rising flour
  • ½ teaspoon salt
  • 1.5 cups buttermilk
  • 4 large eggs
  • 4 tablespoons vegetable oil

Instructions

  1. Preheat oven to 400 degrees F.
  2. In a bowl combine self-rising yellow cornmeal, self-rising flour, and salt. Whisk together to make sure the mixture is well combined.
  3. Add milk, eggs, and vegetable oil to the flour and stir to combine.
  4. Spoon the batter into a greased muffin tin filling each cup 3/4 full.
  5. Place in the oven and bake at 400 degrees F. for 20 minutes or until a toothpick inserted into a muffin comes out clean.
  6. Serve warm with butter.
