Ingredients
- 1 (14-oz) can black beans drained and rinsed
- 2 ears corn cooked and kernels removed (or 1 14-oz can corn kernels, drained and rinsed)
- ½ large red bell pepper chopped
- ½ cup white onion finely chopped
- 1 clove garlic minced
- 1 Jalapeño seeded and finely chopped
- 2 Tbsp fresh cilantro finely chopped
- ¼ tsp kosher salt to taste
- ½ tsp ground cumin
- 2 limes juiced
- 1 ripe but firm avocado peeled and diced
Instructions
- In a mixing bowl, combine the first eight ingredients.
- Toss everything together with the lime juice. Carefully fold in the diced avocado.
- Keep salsa refrigerated until ready to use.
